To make some ANZAC biscuits for yourself, follow my easy recipe:
85g of porridge oats
85g of desiccated coconut
100g of self raising flour
100g of caster sugar
100g of butter
2 heaped tablespoons of golden syrup
Mix oats, coconut, flour and sugar together and form a well in the middle.
Melt the butter and syrup in a pan on the stove and then pour into the dry ingredients.
Mix well together and then spoon onto trays lined with grease proof paper.
Each biscuit should be about a tablespoon of mixture and you should pat them down slightly- they'll spread in the oven as they cook. Make sure you leave some space around each one to allow room to spread.
Bake in the oven for 15-20 minutes in a preheated oven (180 degrees) until brown.
NOTE: Because of the oats and golden syrup in them, the biscuits are going to go a dark golden brown...don't panic! they are supposed to be that colour!
